Moroccan Lamb

Ingredients:

For the Marinade:

  • 2 lbs (about 1 kg) lamb chops or leg of lamb, bone-in
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Juice of 1 lemon

For the Yogurt Sauce:

  • 1 cup Greek yogurt
  • 1 tablespoon fresh mint, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

1. Prepare the Marinade:

  • In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, ground ginger, cayenne pepper, salt, black pepper, and lemon juice to create the marinade.

2. Marinate the Lamb:

  • Place the lamb in a shallow dish and rub the marinade evenly over the meat. Ensure all sides are well-coated.
  • Cover the dish and let the lamb marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavour.

3. Preheat the BBQ Grill:

  • Preheat your BBQ grill to medium-high heat.

4. Grill the Lamb:

  • Remove the lamb from the refrigerator and let it come to room temperature for about 30 minutes.
  • Grill the lamb for approximately 4-5 minutes per side for medium-rare or adjust the cooking time according to your preferred doneness. For well-done lamb, cook a bit longer.

5. Prepare the Yogurt Sauce:

  • While the lamb is grilling, mix together Greek yogurt, fresh mint, fresh cilantro, lemon juice, salt, and pepper in a bowl. This will be a refreshing sauce to accompany the lamb.

6. Rest and Slice:

  • Once the lamb is cooked to your liking, remove it from the grill and let it rest for 5-10 minutes. Slice the lamb into serving portions.

7. Serve:

  • Arrange the grilled lamb on a platter and drizzle with any remaining marinade.
  • Serve with the prepared yogurt sauce on the side.
